How each type removes air
An edge sealer (also called an external, suction or clamp sealer) clamps the open end of the bag under the lid. A pump draws air out of the bag through that open end, then a heat bar melts the bag shut. For air to keep flowing as the bag collapses, the bag needs an embossed or textured inner face that forms tiny channels. Anything loose and wet in the bag also moves toward the pump with the air.
A chamber sealer puts the entire bag inside a closed chamber with the open end lying across the seal bar. The pump lowers the pressure in the whole chamber, so the pressure inside and outside the bag drops together. Liquid has no reason to rush out of the bag. When the cycle ends, the bar seals the bag, air returns to the chamber, and outside air pressure squeezes the bag tight around the food. What each type can and cannot seal
Liquids and wet foods. This is the clearest split. Both Avid Armor listings describe sealing soups, stews, sauces and marinades without liquid being drawn out. With an edge sealer, the usual workaround is to freeze soups or stock flat in the bag first, then seal the frozen block. Our how to vacuum seal liquids guide shows both methods. Chill warm liquids before any chamber cycle, because liquid boils at a lower temperature under low pressure and can foam over.
Long items and big cuts. An edge sealer only needs the bag mouth under the bar, so the bag can be as long as your roll allows. A whole brisket, a rack of ribs or a long fish fits easily on the LEM or Weston with their 14 to 15 inch bars. A chamber sealer limits you to what fits inside the chamber. The USV20 listing gives a 12.25 x 8.5 x 3 inch chamber and pouches up to 11 x 10 inches; the USV32 listing does not state its chamber dimensions.

Delicate foods. Both types can crush bread or soft fruit. The Weston listing mentions a manual mode for delicate foods, and the USV20 lets you shorten vacuum time from 15 to 60 seconds.
Bag cost per year and when the chamber pays for itself
The running cost of a vacuum sealer is mostly bags. Embossed bags and rolls for edge sealers generally cost more per bag than smooth chamber pouches of the same size, because the texture adds material and manufacturing steps. The Avid Armor USV20 listing says this directly: it works with affordable smooth pouches to cut long term supply costs.
There is no single payback figure because bag prices and your volume vary. Work it out for your own kitchen with these steps.

Size, weight and upkeep
Edge sealers are long and slim and slide into a drawer or onto a shelf. Chamber sealers are boxes: the USV20 listing gives 14 x 12 x 8.25 inches and 17.55 lb, and it is the compact model in the Avid Armor line. Plan for a permanent spot on the counter if you seal often.
Upkeep differs too. Edge sealers mainly need the foam gaskets and seal bar kept clean. The USV32 listing calls the machine maintenance-free, and the USV20 listing highlights a user-replaceable seal bar.
