**Short answer:** A regular (edge or external) vacuum sealer pulls air out through the open end of a textured bag, so it struggles with liquids and needs embossed bags. ## How each type removes air

An **edge sealer** (also called an external, suction or clamp sealer) clamps the open end of the bag under the lid. A pump draws air out of the bag through that open end, then a heat bar melts the bag shut. For air to keep flowing as the bag collapses, the bag needs an embossed or textured inner face that forms tiny channels. Anything loose and wet in the bag also moves toward the pump with the air.

A **chamber sealer** puts the entire bag inside a closed chamber with the open end lying across the seal bar. ## What each type can and cannot seal

**Liquids and wet foods.** This is the clearest split. Both Avid Armor listings describe sealing soups, stews, sauces and marinades without liquid being drawn out. With an edge sealer, the usual workaround is to freeze soups or stock flat in the bag first, then seal the frozen block. **Long items and big cuts.** An edge sealer only needs the bag mouth under the bar, so the bag can be as long as your roll allows. A whole brisket, a rack of ribs or a long fish fits easily on the LEM or Weston with their 14 to 15 inch bars. A chamber sealer limits you to what fits inside the chamber. ## Bag cost per year and when the chamber pays for itself

The running cost of a vacuum sealer is mostly bags. Embossed bags and rolls for edge sealers generally cost more per bag than smooth chamber pouches of the same size, because the texture adds material and manufacturing steps. There is no single payback figure because bag prices and your volume vary. Work it out for your own kitchen with these steps.
